Link Up Your Zucchini Recipe (Recipes) ~ How To Use All That Zucchini


How many of you have some GREAT Zucchini Recipes.   I have a couple that I really like, but sure would like to see how you use your extra zucchini.

One of the ways I do mine is to dry it and make Zucchini Chips.

First, I cut the Zucchini as thin as I can. I have a hand food grater that does a great job. It is one that you can use to make coldslaw, With the different blades on the side, but I can also cut it with a knife.

I tried drying the zucchini  in a food dehydrator and really didn't like the taste so, next I did it in my oven and WOW!!! so crisp and good.

Next, put a piece of tin foil on the pan and oil it with olive oil.  I used first cold pressed, but you can use any you like.

I put them in the oven on low at about 210 degrees.  It takes hours to get them done.

They shrink up so much that it only looks like a few, but I started with the pan full

These ones are finished and taste amazing.  Almost like eating a potato chip only healthier

  1. I'm so mad the squash bugs ate all my zucchini. I have a special brew going for those little brats right now - full of garlic and cayenne. But it's too late for my zucchini plants - I'm hoping to save my cucumbers and cantaloupes though.

  5. I don't have any recipes for zucchini up right now.

    I've made zucchini bread. The last time I made it, it was too sweet for what I'm used to.

    I usually slice it and cook it in olive oil with diced tomatoes. I sprinkle parmesan cheese on it before serving it.

    I've also added shredded zucchini to brownies. It tastes really good.

    We didn't grow any this year. Maybe next year.

  10. I am going to have to try the chips, they sound good. Thanks for the tips. What kind of squash do you have your hubby grill and how do you prepare it? I know I am not the only one desperate for tasty food we can eat.

  14. I have never heard of "dried Zucchini", but it sounds good. I have had a good harvest of yellow squash and zucchini this year. It's tastes really great if you marinate the squash, union, zucchini and cut up pieces of steak it in Italian dressing and a little Teriyaki sauce. Let marinate about an hour and put them on shish kebabs and place them on the grill for about 15 minutes--you have to turn them several times to get them evenly browned. But, they are really good like that. You have a great blog and I am going to start following you.

  16. One thing I love to do with a lot of extra zucchini is cut it up in small cubes and put in freezer bags. Then when I'm making vegetable soup in the fall and winter, just add a bag of zucchini to the other veggies.

  21. My parents make them on the stove with some chopped up onions and a little bit of chicken broth. I love zucchini and there are so many ways to make it. I also love it fried with parmesean!

  24. I have only eaten this a few times. The Mr. don't like it so it's one of the few things we don't grow in our garden. It taste like squash to me but he don't agree lol. I'll have to see if we can grow a few next year so I can try your recipes. The only thing we haven't plowed up in the garden is okra. We are replanting some peas for a late crop.
